Three friends, one summer evening, and a dynasty's name.

On a warm English summer evening, three colleagues-turned-friends — chefs from Kerala with nearly three decades of shared craft — asked the question that changed everything: why not bring this dream to life together?

Months of planning, scouting and blessings later, the dream found a name. In November 2018 Zamorins opened in Whitley Bay. In 2025, a second room in Huddersfield — the taste of God's Own Country, carried to a new valley.

With nearly three decades in hospitality, Nebu has moved from skilled chef to a highly respected leader overseeing day-to-day operations at Zamorins. His culinary foundation and people-first approach make him the cornerstone of the Zamorins experience.

Biju is the heart of the Zamorins kitchen, with over 29 years of culinary expertise from some of the biggest and most famed kitchens. Known for his commitment to authenticity and consistency, he takes pride in every dish that leaves his kitchen.

Jaggu Jose

With a warm smile and a keen sense for flavour, Jaggu makes sure every beverage and pairing at Zamorins meets the highest standards. His 29+ years of industry experience show in his curated drink menus and inventive pairings.

Vinod

Director of Operations

Vinod Mathew

Vinod brings over 20 years of operational excellence to Zamorins. With a Master's degree in Hospitality Management from Switzerland, he combines strategic insight with hands-on leadership.

Mattin John Pappady

With more than 20 years of mastery in South Indian cuisine, Mattin built his reputation in celebrated kitchens across India and the UK, beginning his journey at the prestigious Taj Malabar and the CGH Earth Group in Kerala.
