01 The Legacy

Seven hundred years before us, merchants of all parts sat at this table.

Zamorin is the European name for Samoothiri — the dynasty that ruled Malabar for nearly seven centuries and made the ports of Kerala the crossroads of the ancient world. Ibn Batuta wrote of its harbour; Europe fought wars for its pepper.

Our kitchen is a tribute to that age of exchange — rooted in Kerala, curated for now, and served under one rule.

Pepper sailed west — a kitchen followed.

For four centuries Malabar pepper seasoned the British table. In 2018 the exchange came full circle — a South Indian kitchen setting its table on an English coast, then a Yorkshire valley.
